We will bake tender zucchini stuffed under a cheese crust in the oven - a universal dish for every day, for a friendly feast or a picnic in the countryside.

Minced meat for filling zucchini can be very diverse: from meat and chicken - for meat eaters; with cereals, herbs and vegetables - for supporters of plant-based and light foods; with specific capers, anchovies and expressive cheeses - for those who wish to add some fun.

Ingredients:

Zucchini - 300 g

Parmesan cheese - 50 g

Tomatoes - 100 g

Mayonnaise - 30 g

Vegetable oil - 30 ml

Garlic - 1 tooth

Salt, black pepper - to taste

Step by step recipe:

Step 1 - To cook zucchini in the oven with cheese, take the foods on the list. The minimum set of ingredients for a moderately spicy, juicy snack is indicated. Substitute any other meltable cheese for Parmesan, if you like.

Step 2 - The younger the vegetables, the better. Cut clean zucchini in half lengthwise, boldly divide too large into four equal parts. We take out the pulp with the tip of a spoon, with a knife or other improvised means suitable for this simple manipulation. I recommend removing tough seeds (for overripe vegetables). Do not throw away the squash pulp - everything goes into business, more precisely, into the filling. We form the boat blanks.

Step 3 - Cut the flesh of the courgettes, fleshy and ripe tomatoes into small cubes. Chop the garlic, mix with salt, ground hot pepper and a portion of mayonnaise (or sour cream). The simplest filling for stuffing zucchini is ready.

Step 4 - Lightly ram and generously stuff the zucchini with a seasoned viscous mixture - spread it in a slide along the entire length.

Step 5 - Sprinkle generously with cheese shavings around the entire perimeter - completely cover the minced vegetables. We transfer the semi-finished products to an oiled baking sheet (in a refractory form, on parchment or foil with vegetable oil). We put in a hot oven for about 30 minutes, keep at a temperature of 190 degrees. For the first 10 minutes, put on a lid (foil / parchment) so that the dense base - zucchini - is thoroughly steamed. We bake until golden brown from melted cheese.

Step 6 - Serve the zucchini baked with cheese, hot or warm, garnishing with fresh herbs.
