The spinach and cheese puff pastry is reminiscent of a version of Spanakopita. Unlike the original Greek pie, which is made from filo dough, I will use more affordable yeast-free puff dough in my recipe. In addition to spinach, you can take any seasonal greens as a filling: sorrel, parsley, dill, lettuce, nettle, green onions.
I recommend using natural cheese without plant additives. It is better not to use any analogs, such as fetaxes, etc. As a last resort, replace feta with any brine cheese, such as feta cheese.
Ingredients:
Yeast-free puff pastry - 400 grams
Spinach - 250 grams
Greens - 250 grams
Bulb onions - 2 pcs.
Chicken eggs - 2 pcs.
Ground nutmeg - 0.5 tsp
Feta cheese - 400 grams
Vegetable oil for frying - 20 ml.
Sesame seeds - 1 tablespoon
Cream - 1 tablespoon
Salt to taste
Ground black pepper - to taste
Course of action:
1. Prepare the required foods. Remove the puff pastry from the refrigerator in advance so that it defrosts.
2. Place the spinach leaves in a bowl. Add chopped parsley, dill, green onions. If frozen herbs are used, they do not need to be thawed. Drive in eggs.
3. Peel and cut onions into half rings. Heat vegetable oil in a frying pan and fry prepared onion slices.
4. Put the fried onions, pieces of cheese in a bowl with herbs. Feta can be sliced or crumbled by hand. Salt and pepper the filling. Add nutmeg and stir.
5. Grease a baking dish with a little vegetable oil. For reliability, the bottom can be lined with oiled parchment paper. Roll out the puff pastry. Carefully transfer one half of it and spread over the bottom and sides of the mold.
Heavily drooping edges can be trimmed slightly. To avoid waste of the dough, you can roll out the cut layer and lay it on the bottom with another layer.
6. Put the prepared filling on top. Spread it evenly over the entire surface.
7. Cover the filling with the other half of the rolled dough on top. Remove excess with a rolling pin: for this, using light pressure, roll it along the edges of the mold. The bottom and top layers will join and the excess dough will be cut off.
8. With a culinary brush, grease the surface of the future cake with cream and sprinkle with sesame seeds. Bake in an oven preheated to 180 degrees for 40 minutes until browned.
9. The pie is good both hot and cold, but to make it easier to cut, it is better to cool it.
Crispy layered dough and juicy, very delicate filling will leave no one indifferent. Plus, spinach and cheese pie is healthy and quite filling.
