For seafood lovers - a simple recipe for squid in sour cream with onions. The dish is prepared in a matter of minutes, but with little hassle. The whole difficulty lies in cleaning the clams, and the beginner can handle the rest.
Ingredients:
Squid - 400 g
Sour cream - 150 g
Onions - 1 pc.
Vegetable oil - 30 ml
Salt, black pepper - to taste
Step by step recipe:
Step 1 - To cook squid in sour cream and onions in a pan at home, take the foods on the list. Shellfish should be fresh or previously thawed. If you have a choice, buy seafood that is still unrefined and not cooked. The fat content of sour cream is at your discretion, even with 10% it turns out very tasty (provided that you like the taste and characteristic elastic squid meat).
Step 2 - First of all, we clean out all the insides, take out the transparent and flexible chord / "ridge", remove the eyes. We rinse thoroughly, especially the cavity. Immerse clean shellfish in freshly boiled water and boil for about 10 seconds. That's right, just seconds. Long cooking is not necessary, the squid will become very tough and turn into rubber. Salt the boiling water a little in advance, if you wish, throw in branches of herbs, pepper, all sorts of aromatic additives.
Step 3 - We quickly catch the boiled seafood and immediately lower it into ice water. The sharp temperature drop makes it easy to remove the top film.
Step 4 - Diligently clean, tear off the entire top layer. After that, you can rinse again to make sure the seafood is clean.
Step 5 - Simultaneously, in a hot frying pan or in a saucepan with the addition of lean refined oil, first pass the onion chopped into rings or half rings until transparent. After three or four minutes, pour in sour cream or heavy cream.
Step 6 - Cut the peeled shellfish into rings or strips. Leave the tentacles intact. Transfer to sour cream and onion gravy, stir, salt to taste and sprinkle with ground hot pepper. We warm up for no more than a minute and remove from the stove.
We serve delicious squid in sour cream with onions, decorating with any fresh herbs: onion feathers, parsley, dill, and better - without garnish, as a hot (or cold) snack.
