Are you going to make zucchini pancakes, but there are no eggs at home? No problem! After all, there is a proven recipe where you can do without this, at first glance, the most important ingredient. Zucchini fritters without eggs are very tender and tasty. Garlic and herbs give them a delicate taste and aroma. And due to the fact that the grated zucchini is squeezed out of excess juice, a little flour is added to the dish, and the pancakes are less high-calorie, with a pronounced vegetable taste.
Ingredients:
Zucchini - 600 g.
Garlic - 1 clove
Salt to taste
Wheat flour - 4 tablespoons
Parsley - 3 sprigs
Vegetable oil for frying - 70 ml.
Step by step recipe:
1. To make egg-free zucchini pancakes, prepare the ingredients listed for the recipe. When choosing zucchini, give preference to young ones. They have a thin skin that does not need to be peeled and soft seeds, which are ideal for this dish. If the fruits are old, peel them and remove the hardened seeds.
2. Wash the zucchini, dry it and cut the tails. Grate vegetables on a medium grater. Leave the zucchini shavings at room temperature for 10-15 minutes.
3. Then squeeze out the excess juice. This can be done with your hands, holding the pulp between your palms, or with gauze. The zucchini themselves are watery, so there will be a lot of juice. Pass the peeled garlic through a press. Wash the parsley and chop finely. Add garlic and herbs to a bowl. Salt.
4. Add the sifted flour in small portions, achieving the desired consistency.
5. The dough for zucchini pancakes should be thick enough and slowly, as if lazily, drain from the spoon. Make sure that all the flour has dispersed and there are no dry areas. You may need a little more flour, the amount will depend on the juiciness of the zucchini.
6. Preheat a skillet with vegetable oil and lay out the dough, forming small pancakes of the desired shape. Traditionally they are made round or oval.
7. Cook the pancakes over medium heat until golden brown, then gently turn over and fry for a few more minutes. Transfer them to a paper towel and blot off excess oil.
8. Delicate vegetable zucchini pancakes cooked without eggs can be served.
They are delicious both hot and chilled. Sour cream or sour cream sauce will perfectly emphasize the taste of this dish. I recommend giving it a try.
