A popular and beloved hot appetizer of French cuisine - julienne with mushrooms and cheese - is appropriate for a festive table, a friendly party, gatherings with girlfriends and a family snack.

Ingredients:

Champignons - 150 g

Onions - 1 pc.

Cream 10% - 200 ml

Flour - 30 g

Hard cheese - 150 g

Vegetable oil - 20 ml

Butter - 20 g

Nutmeg, salt, black pepper - to taste

Greens - for serving

Step by step recipe:

Step 1 - To make julienne with mushrooms and cheese at home, take the foods on the list. Choose melting cheese varieties ranging from neutral to expressive and mature.

You can make one large dish for everyone or serve in portions to everyone, which is traditional and much more convenient. Stock up on cocotte makers / baking tins.

Step 2 - Preheat a frying pan or stewpan, pour in the vegetable oil and heat the pieces of butter. There are two types of oil in my recipe, use one if desired. First fry the onion - sauté the chopped onion cubes until transparent for about 3-4 minutes. Do not dry, keep juicy, slightly golden.

Step 3 - Put the mushrooms not too finely chopped to the onion. Stir and continue frying for another 3 minutes. If moisture forms, evaporate.

Step 4 - Pour in the wheat flour and quickly work with a spatula. Mix, cover with a flour layer of onion-mushroom mixture. Half a minute is enough, do not let the flour burn. Wheat flour acts as an obligatory thickener. The main thing is to leave the consistency silky, viscous, not too dense.

Step 5 - Pour in milk cream, season with ground nutmeg, salt and hot pepper. Stir continuously so that the sauce thickens evenly and there are no lumps.

Step 6 - Delicious gravy is ready and suitable for serving with mashed potatoes, pasta, cereals. But since in our version a julienne is being prepared, we remove the stoves from the upper fire and proceed to the next stage.

Step 7 - Fill the heat-resistant pots with a thick and viscous mass. We distribute in equal proportions.

Step 8 - Generously cover with cheese shavings and put in the oven, which was hot by that time, for 7-10 minutes. We bake mushroom julienne until golden brown melted cheese crust at a temperature of 200 degrees.

Decorated with a branch of fresh herbs, serve julienne with mushrooms and cheese as a hot snack.
