Having decided to grill fish, be sure to first prepare a fragrant marinade in which you need to place the fish carcasses for a couple of hours. This is especially true for river fish: bream, carp, asp, carp, silver carp, etc. Since they do not have a pronounced taste and aroma, the marinade will be very useful! Be sure to water and moisten the fish during these two hours with the prepared sauce both inside and out (for even soaking).
Do not use garlic, either fresh or dried, as it burns with prolonged heat treatment and gives the dish a bitter taste. If you still cannot do without its aroma, then make garlic oil and saturate it with already fried or baked fish.
Ingredients:
Onions - 1 pc.
Soy sauce - 100 ml
Salt and pepper to taste
Lemon juice - 1 tablespoon
How to cook:
1. Combine salt and ground black pepper in a deep bowl. Since soy sauce is also indicated in the ingredients, try to reduce the amount of salt itself a little from the usual. Squeeze the juice out of half a lemon and pour it into a container - you just get about 1 tablespoon. For lack of of such citrus fruit in your kitchen, use concentrated lemon juice, slightly diluting it water. As a last resort, add a couple of pinches of citric acid.
2. Pour in the soy sauce and mix thoroughly. Today, such a product has many varieties: lime, classic, smoked, etc. - choose as you wish.
3. Peel the onion head, rinse it under running water and grate it into a container on a fine mesh grater. Be sure to open a window or turn on the hood, as rubbing such a vegetable is fraught with profuse lacrimation. But the onion must be grated, and not chopped, so that it quickly gives its taste and aroma to the fish, moreover, the chopped onion rings or pieces will burn when grilled fish. Gently mix the grated mass into the marinade, leave for 10 minutes in a cold place to infuse. At the same time, do not forget to cover the container with cling film or a bag so that other products do not drag the onion smell onto yourself.
After the specified time, the peeled and washed fish can be marinated in the prepared sauce. The approximate marinating time is 2-3 hours. It is not necessary to simmer the fish in it for a longer time, since grated onions, during long-term storage, begin to taste bitter and give it a bitter taste.
