Traditionally, when stewing cabbage, a minimum set of additional components is used, often onions and carrots. But for a change, cabbage is supplemented with other ingredients, for example, beans are great. You can use canned finished product or boil raw beans in advance. These beans make the dish more satisfying.
Spices of your choice can be added to enhance the flavor and aroma. Also in the recipe, tomato paste is used, it gives the dish a sour taste and rich color.
Ingredients:
White cabbage - 700 gr.
Beans - 200 gr.
Carrots - 1-2 pcs.
Tomato paste - 40 gr.
Onions - 1 pc.
Refined oil - 3 tbsp.
Garlic - 1 clove
Water - 150 ml.
Spices (salt, turmeric, sugar, paprika, pepper) - to taste
Parsley - 20 gr.
Step by step recipe:
1. Sort the beans carefully, removing the spoiled specimens, and soak in water for 6 hours (you can overnight). This procedure will shorten the cooking period slightly. After the beans, rinse, place in a saucepan, cover with a large portion of water. The cooking time for beans is individual, it depends on the selected variety, it can vary from 60 to 120 minutes. Throw the salt towards the end of the cooking process.
2. In the meantime, turn to stewing the cabbage. Chop the onion into cubes, carrots into strips using a grater with large holes.
3. Remove the top leaves from the cabbage head, cut the stalk, chop into thin strips.
4. Heat a large, thick-walled skillet on a hotplate, pour in oil, then send the onion shredder and carrots. Saute vegetables until tender for another 5 minutes over medium heat.
5. Next, add the prepared cabbage.
6. Season the dish with salt and other spices, stir vigorously, add another portion of oil so that the cabbage does not burn. Reduce fire to minimum. Simmer the cabbage until soft, about 20 minutes, stirring frequently. Add water periodically.
7. When the cabbage is soft, top it with tomato paste and garlic, minced with a garlic clove.
8. Remove the beans from the water in which they were cooked, add them to the cabbage and stir. Simmer the dish for another 20 minutes with a lid on the pan. Add water as needed. Then taste to determine the missing spices.
9. Before serving, sprinkle the stewed cabbage with beans with chopped herbs.
