Delicious and juicy liver cutlets from beef liver will be relevant both with a side dish and as a separate snack with sauces or dips. You can take them with you on the road, to a picnic or to work, because this dish is delicious both hot and cold.

In fact, such cutlets are nothing more than ordinary liver pancakes, just sculpted from liquid liver mince classic cutlets are simply unrealistic, so it is laid out with a tablespoon in boiling oil, getting at the exit such a dish. Cooking differs only by adding white bread soaked in milk.

By the way, after cooling, cooked cutlets can be frozen in the freezer by placing them in a bag for up to 6 months. And at the right time, just heat it up in the microwave for 3-5 minutes - all that remains is to boil a side dish of cereals, pasta or vegetables.

Ingredients:

Beef liver - 0.5 kg

White bread - 2 slices

Onions - 1 pc.

Chicken egg - 2 pcs. (small)

Milk - 80 ml

Wheat flour - 3 tbsp.

Vegetable oil - 100 ml

Salt and pepper to taste

How to cook:

1. Put slices of white bread in a deep container and cover with milk of any fat content. Leave it on for 10-15 minutes. It is precisely white bread that is needed, since black or rye will give the cutlets a bitter taste. At the same time, peel the onion and rinse in water.

2. Rinse the beef liver in water too, remove all the veins / films / vessels and cut into portions so that they fit into the meat grinder pipe. Cut the onion into 4 pieces. Pass the offal, onion and bread soaked in milk through a meat grinder, squeezing it slightly. It is advisable to install a grid with fine cells so that the minced meat is more uniform.

3. Pour chicken eggs (two small or one large) into a container with minced liver, add ground black pepper and salt to taste. Since beef liver itself has a bitter taste, it is better not to add additional seasonings or spices. Pour in the flour and stir everything thoroughly, leave the minced meat for 15-20 minutes in the refrigerator, covered with cling film.

4. Heat vegetable oil in a pan - there should be quite a lot of it so that the workpieces are fried evenly. Put the cooked minced meat in the form of pancakes with a tablespoon and fry for 1-2 minutes on each side until golden brown.

5. At the same time, heating should be medium so that the cutlets have time to fry inside.

6. Then put them on a paper towel - excess fat will be removed from the prepared dish.

Serve liver cutlets with sour cream or plain thick yogurt. They are very tasty and appetizing, especially when hot.
