Beef stew with mushrooms

What can you make from a good piece of veal? Regular goulash is too boring. The Internet comes to the rescue. What is the enticing name of the veal stew dish - "Frikando". It turned out that it is found in Italian, French, Spanish cuisines. The differences are in the cooking methods. For myself, I chose the Spanish recipe for fricando in Catalan. The unusual ingredient used to thicken the sauce in this dish is almond flour. Imagine how delicious it is!

Ingredients:

Veal - 1 kg

White wine - 1 glass

Water - 1 glass

Flour - 3 tablespoons

Onions - 1 pc.

Mushrooms - 300 grams

Vegetable oil - 3 tablespoons

Almond flour - 1 tablespoon

Garlic - 2 cloves

Salt - 1 tsp

Ground white pepper - 0.5 tsp

Bay leaf - 2 pcs.

Tomato paste - 1 tablespoon

Course of action:

1. Prepare the required foods. The classic version uses dried mushrooms. They must first be filled with boiling water. If not, use fresh or canned.

2. Cut the veal into slices.

3. Beat off the meat by covering it with plastic cling film (it will protect the work surface from splashes).

4. Mix flour with salt, pepper and roll each piece in this mixture. Shake off excess flour.

5. Pour 1 tbsp into the pan. vegetable oil. Fry the beef chops until golden brown on both sides, 3-4 minutes each.

Add oil as needed.

6. Dice the onions.

7. In the pan where the meat was fried, sauté the onion for 2-3 minutes. Add bay leaves.

8. Lay out the mushrooms. If using dried, squeeze them well after steaming.

9. Add chopped garlic, almond flour and tomato paste. Pour in wine and water. Boil the sauce for 5 minutes.

If there is no almond flour, sauté the almonds and grind them in a mortar along with the garlic. Instead of pasta, you can take any tomato sauce or tomatoes in your own juice, and instead of water - broth.

10. Place the fried meat in the sauce. Cover the pan with a lid and simmer the dish for 40-60 minutes over low heat.

Frikando in Catalan is ready. This dish only tastes better when steeped. A glass of white wine with beef stew with mushrooms will be very useful.
