Nutritious Meatball and Bean Soup is the perfect hot dish for fall or winter days to keep you warm and full for the rest of your day. You can buy legumes at the store, for example, you can buy canned beans in tomato sauce. Or you can boil dried beans of any kind, but it is best to do this in advance, around the evening, so that you have the necessary ingredient in stock by the morning.

Meatballs can also be purchased at the supermarket, or you can prepare meat at home and freeze. When you add them to the broth, you do not need to defrost the meat preparations - they will remain more juicy inside, as they will instantly scald from above when in contact with the boiling broth. Soup boiling time ranges from 20 to 25 minutes, and even frozen meatballs will be successfully cooked inside, not to mention the potato slices.

Ingredients:

Meatballs - 250 g

Potatoes - 3 pcs.

Carrots - 1 pc.

Onions - 1 pc.

Canned beans - 100 g

Water - 1.5 l

Bay leaf - 2 pcs.

Salt and pepper to taste

Greens to taste

How to cook:

1. Peel the potato tubers, rinse in water and cut into medium cubes. Peel the onion, rinse under running water and chop into small cubes. Send both vegetable cuts to the pot or other container in which you intend to cook the flavorful soup. Add bay leaves there.

2. Pour in hot water and place the container on the stove, turning on maximum heat. Remember that adding hot water will reduce the cooking time by 5-7 minutes. Bring to a boil and remove the resulting foam. Reduce heat to medium and cook vegetables for about 8 minutes.

3. At this time, peel the carrots, rinse and grate with fine meshes. Thanks to this grinding, the root vegetable will quickly cook and give the dish a bright orange hue.

4. Put the meatballs in a slightly boiling broth, possibly frozen, one at a time so that they don't stick together.

5. Stir the soup gently and cook for another 8-10 minutes, adding chopped fresh dill or parsley.

6. 1-2 minutes before the dish is ready, put the canned beans in it, after opening the preservation and draining the marinade.

Pour the soup into deep bowls, adding both the potato slices and the meatballs. Serve with bread, croutons, or other savory pastries.
