If you like delicious, ruddy barbecue, then you will definitely like this recipe. Marinating meat in tomato juice will not be difficult, it is done quickly. You can use pork, lamb, poultry, nutria, rabbit, etc. I opted for pork, took the neck part. In my opinion, it is from the neck that the most delicious shish kebab is obtained, moderately fatty and quite juicy.

Ingredients:
Pork - 600 g.
Tomato juice - 200 ml.
Salt to taste
Barbecue seasoning - 1 tbsp.
Bulb onions - 1 pc.
Step by step recipe:
1. To prepare a kebab, prepare the required set of ingredients. I have home-made tomato juice, if you don't have one, store-bought juice will do.
2. Wash the meat under cold running water, then pat dry with paper towels. Place it on a cutting board and use a sharp knife to cut it into medium-sized pieces, being careful to keep them the same. Transfer the pork to a container suitable for marinating, preferably with a lid.
3. Add salt, seasoning and chopped onion to the meat. Pay attention to the composition of the seasoning, some manufacturers initially add salt there, so we may not use it at all or add much less than usual.
4. Now you need to mix everything thoroughly, pressing the onion tightly with your hands so that the juice stands out.
5. Pour the tomato juice over the contents of the bowl.
6. Stir again, cover and refrigerate for at least 3-4 hours, or better overnight.
7. Prepare the grill in advance. When the wood burns out and creates a lot of heat, place the meat on the wire rack. Skewer if desired.
8. Roast over hot coals, remembering to turn over periodically. The cooking time will depend on the temperature, on average 15 to 20 minutes. To test the pork for doneness, cut a piece or poke it with a knife. The extracted juice should be light and transparent, without bloody blotches.
9. Delicious, fragrant shish kebab in tomato juice is ready. Carefully remove it from the wire rack and transfer to a serving dish.
It is very important to serve it immediately after cooking, while it is hot.
Fresh vegetables, herbs, pickled onions, and, of course, lavash and your favorite sauce are suitable as a side dish.
