Cooking tasty, hearty and rich cabbage soup with fresh cabbage and beef is not difficult at all, it only takes enough time to cook the meat and simple, affordable products. In the cold season, this is the most popular dish we cook for lunch. As the Russian proverb says: "Shchi and porridge - our food!"

Ingredients:

Potatoes - 300 gr.

Carrots - 100 gr.

Cabbage - 400 gr.

Beef - 700 gr.

Tomatoes - 250 gr.

Water - 2 liters.

Sweet pepper - 100 gr.

Bulb onions - 50 gr.

Vegetable oil - 50 ml.

Salt to taste

Step by step recipe:

Step 1 - We prepare the necessary products according to the list. Better to take the beef on the bone. Fresh tomatoes can be substituted with tomato paste or tomatoes in their own juice.

Step 2 - Rinse the beef. Fill with water. When boiling, remove the foam and simmer for 1-1.5 hours. The younger the meat, the less time it takes to cook. During this time, it will begin to noticeably separate from the bone.

Step 3 - Strain the broth. Separate the beef from the bones. Return the stock to the fire.

Step 4 - Peel the potatoes, rinse and cut into small pieces. Put meat and potato slices into the boiled broth. Cook from the moment of boiling for 20 minutes.

Step 5 - To prepare the frying, prepare the necessary vegetables - peel and grind them. Cut carrots and bell peppers into strips, onions into small cubes.

Step 6 - Rinse the fresh tomatoes, cut into halves and three on a medium grater. We only need the pulp. Although you can skip this step and simply cut the tomatoes into slices. Or you can scald them with boiling water, peel them and then cut them into slices.

Step 7 - Heat oil or fat in a pan, fry the vegetables with constant stirring until soft, make the fire low. Then pour in the grated tomatoes.

Step 8 - Stew the vegetables with the tomatoes under the lid until the liquid evaporates and the frying turns bright red. Frying with tomato paste will take very little time.

Step 9 - Chop the cabbage into thin strips.

Step 10 - After the potatoes have boiled for 10-15 minutes and our frying is ready, we add cabbage to the cabbage soup.

Step 11 - Cook the remaining time, i.e. another 15-20 minutes. Fresh cabbage does not require a long boil. At the end, salt to taste and add finely chopped parsley or dill. After the soup has cooked, let it brew a little.

Delicious fresh cabbage soup with beef is ready. Serve them hot, adding sour cream, onions or garlic.
