Walnut is one of the most fragrant and oily nuts. Its dried kernels transform the filling for pies and strudel, a layer of baklava and any dough: airy biscuit, crumbly shortbread, yeast pastry and others. For example, weightless cookies with walnuts are easy to prepare, without any special baking tricks, they are characterized by a brittle structure, a delicious nutty note and are ideal for a cup of coffee, tea or milk.

Ingredients:

Flour - 200 g

Sugar - 3 tbsp. l.

Walnuts - 100 g

Egg (yolk) - 1 pc.

Butter - 100 g

Salt - 3 g

Step by step recipe:

Step 1 - To make walnut cookies at home, take the foods on the list. For sweets, increase the dosage of sugar; according to this recipe, granulated sugar is minimally present in the dough. We also exclude vanilla, vanilla sugar, vanilla flavor (other seasonings) for the sake of the dominant nut. But salt is necessary and obligatory here, with it the cookies have a sweet-salty contrast, which once again successfully emphasizes the nutty component.

Step 2 - The simplest shortbread dough is kneaded both in a food processor and by hand. The main thing is to separate the egg white, which is not needed today. Without protein, nut biscuits do not harden or harden with a stone. Combine the desired portion of flour, butter, 1 tbsp. l. sugar, a large pinch of salt, yolk. Stir until a damp crumb is formed.

Step 3 - Crush the nut kernels and lightly dry in the oven or in a pan (no fat), thereby revealing the aroma. Add the nut crumbs (about 80 g) to the flour mixture and continue to knead.

Step 4 - Additionally, knead the shortbread dough with nuts on a spacious surface, bring it to plasticity. Put it in the refrigerator for half an hour to cool.

Step 5 - Next, we form products in any convenient way: we roll out a layer 4-5 mm thick, with cuttings for cookies, we push the blanks or pull out a long bar and cut it with transverse circles of the same size.

Step 6 - Biscuits with walnuts can be baked like this or covered with the remaining sugar and nut crumbs on one side. Place on a baking sheet or flour-sprinkled form, bake in a pre-heated oven for about 15 minutes at a temperature of 200 degrees.

After cooling down, we serve crumbly nut cookies to the table.
