Fatty, fine-grained cottage cheese makes the minced meat more tender, softer and in taste, the aroma is practically not manifested. Without knowing the composition and trying, it is difficult to guess that pork, beef or chicken cutlets are cooked with cottage cheese. At the same time, bread crumb, flour, starch and other similar products should be excluded - cutlets from chicken or any other minced meat will become juicy thanks to this fermented milk product.

Ingredients:

Minced chicken - 300 g

Curd 9% - 100 g

Egg - 1 pc.

Onions - 1 pc.

Garlic - 1 tooth

Breadcrumbs - 5 tbsp l.

Vegetable oil - 40 ml

Salt, hot pepper - to taste

Step by step recipe:

Step 1 - To fry minced chicken cutlets with cottage cheese at home, take the foods on the list. Choose any oil that is lean, refined, non-fuming and with a neutral odor. Rusks are suitable both purchased and cooked on their own. Dry white bread in the oven and grind until finely crumbled. You can also use wheat flour for breading - then the crust of the cutlets will come out less crispy and oily.

Step 2 - Add cottage cheese with a high percentage of fat to the minced chicken meat, drive in one egg, mix until smooth. If necessary, squeeze the granular, dryish curd through a fine sieve.

Step 3 - For the traditional flavor, grind one garlic clove and a small onion. Pass the garlic through a press or chop finely and finely. Three onions until puree. Add to the minced meat, season with salt and ground hot pepper. Stir thoroughly again, evenly distributing the spices and combining all the ingredients. Lightly upholstery the sticky mass, toss from palm to palm.

Step 4 - With slightly damp or oiled hands, form round / oval blanks. We roll up smooth semi-finished products and sprinkle with breadcrumbs on all sides. Shake off excess crackers. In this form, the cutlets are frozen, laid out in one layer on the board. Then, hardened, they are packed in a food container or bag, and fried as needed without defrost (immediately spread in hot oil in a pan and keep under the lid - fry with different sides).

Step 5 - Without freezing, fry immediately after molding: heat the pan with vegetable oil, bring the semi-finished products to a golden brown crust over moderate heat, turn over once.

We serve hot or warm chicken cutlets with cottage cheese, with any side dish and / or vegetables, herbs, sauces.
