Today we cook a main dish in a frying pan for any side dish: rice, buckwheat, millet, barley, bulgur, other cereals, all kinds of pasta, potatoes. Stew the pork pulp with onions and carrots in a mixture of sour cream and tomato paste. But changing the gravy makes it easy to get a new flavor. There can be chopped hot peppers with tomatoes and garlic based on Mexican cuisine, sauces based on spicy curry or other Indian condiments, soy sauce with or without honey in the style of Asian cuisine - the list, in fact, endless.
Ingredients:
Pork - 500 g
Carrots - 2 pcs.
Onions - 1 pc.
Tomato sour cream sauce - 200 g
Vegetable oil - 30 ml
Salt, pepper, herbs - to taste
Step by step recipe:
Step 1 - To cook pork with onions and carrots in a pan at home, take the foods on the list. If the meat is frozen, thaw it first. There is already an example of tomato sour cream sauce in my recipe box. Cook over it or simply mix sour cream with tomato paste (in approximately equal proportions) and a spoonful of wheat flour to thicken. Use lean refined oil, suitable for frying.
Step 2 - The juicier the carrots, the better. In season, choose young, especially sweet and full of moisture. After peeling, carrots with three coarse shavings or cut into thin long strips. Shred the onion in half rings. We cut clean meat of not too fatty pork into bars, like on beef stroganoff, or into cubes of the same size, like mine.
Step 3 - Warm up a frying pan or stewpan, pour in sunflower / corn oil and saute only onions for the first 2-3 minutes. We bring it to transparency. Then add the carrot shavings, mix and fry for another 2-3 minutes.
Step 4 - Put the pork pieces to the thoroughly oiled and softened vegetables, stir and keep on the fire without gravy (sauce) for 3 minutes, let the meat steam. Can be fried until light crust.
Step 5 - Pour in the rich tomato sour cream sauce. It has enough spice and concentration. If too thick, add some water (about 50-100 ml). We extinguish with active boiling for about 25-30 minutes. With no sauce prepared, first stir the meat with a spoonful of flour to thicken further. Then add sour cream and tomato paste, water, salt, hot pepper, garlic. We check the meat for softness and taste.
Serve pork in a pan with onions and carrots, garnished with fresh herbs, with pickles, and, if necessary, with a side dish.
