This salad of fresh tomatoes, herbs and cheese goes well with any side dish and meat, especially cooked over an open fire. It's good on crispy bruschetta or fresh bread. Before serving, allow time (15-20 minutes) for impregnation, so that the dressing is mixed with the juice of green tomatoes and the appetizer has acquired the obligatory wine flavor in full.

Green tomatoes - 600 g
Mozzarella cheese - 50 g
Dill - 30 g
Green onions - 30 g
Sorrel - 30 g
Vegetable oil - 20 g
White wine vinegar - 20 g

Step 1 - For a delicious, fresh green tomato salad at home, take the foods listed. Since the variety of these tomatoes is naturally sour, and we also have sorrel in the dish, the proportions for dressing may vary. Try along the way.
Step 2 - Wash all vegetables and herbs with cold water, dry, then proceed to slicing. Cut pure tomatoes of green varieties into circles of approximately the same thickness, remove the places of growth of the "tails". Divide into wedges if desired. The main thing is that the salad is not only tasty, but also looks attractive.
Step 3 - I have juicy onion feathers and fragrant dill branches as fresh herbs. If you need more sharpness, use onions or lettuce. I like cilantro, basil, parsley - feel free to add them. Green tomatoes are "friendly" with diverse vegetation.
Step 4 - We easily tear the sorrel leaves into small fragments with our hands - send them next to the working container. Sorrel will add freshness, expressiveness and tonic acid. Can be combined with more delicate lettuce, spinach, and other types of lettuce.
Step 5 - Sprinkle with small pieces of Mozzarella cheese or other soft pickled or curd cheese. An alternative to cheese is unsweetened cottage cheese, grainy or creamy if desired. Easily crumble without ceremony. Mozzarella, feta or cottage cheese will become a color contrast, partially mix with the dressing and soften the green tomato salad. Season with salt, ground hot pepper, natural vinegar and delicious vegetable oil. Stir and leave for 15 minutes.
Step 6 - Put a simple and mouth-watering salad of green tomatoes with cheese and herbs on a plate and serve.
