For a children's party, family or friendly tea drinking, we bake a high-calorie, well-oiled and very fragrant nut cake. In addition to walnuts, you can add almonds, hazelnuts, and other nuts to your taste in the dough.

Ingredients:

Flour - 300 g

Eggs - 3 pcs.

Sugar - 200 g

Butter - 100 g

Sunflower oil - 100 ml

Baking powder - 7 g

Walnuts - 100 g

Salt - 3 g

Step by step recipe:

Step 1 - To make a walnut muffin at home, take the foods listed. There are two types of butter in my recipe: butter and lean. If necessary, bake only on butter (no vegetable), a sufficient dosage is 200 g. Peeled nuts are introduced into the dough both in large kernels and chopped to small / medium crumbs. In random order, the aroma is enhanced with confectionery flavors, vanilla sugar, rum, zest.

Step 2 - We heat the bar of butter on the top heat of the stove or in the microwave, cool. Separate and place egg yolks and whites in different containers. Pour refined sunflower oil to the yolks, add granulated sugar.

Step 3 - Add cooled butter and beat with a hand whisk or mixer with intensive circular movements.

Step 4 - Load a serving of walnuts. I have most of the pieces of large size, so that the taste and density of the nuts is clearly felt. We stir again quickly.

Step 5 - In parallel with a pinch of salt, beat the whites until firm foam. It is easier to work with a powerful unit (mixer). Add about a third of the protein foam to the main mixture with nuts, mix until completely combined.

Step 6 - Combine wheat flour with baking powder and pour into a bowl. We continue kneading. We remove all dry areas. At this stage, the dough becomes thick, heavy.

Step 7 - Change the whisk to a spatula and add the remaining whipped egg whites in two or three steps. We saturate the dough with moisture, make it more viscous and viscous.

Step 8 - We transfer the entire mass with nuts to a fireproof form. We bake a nut cake in a pre-heated oven for about 60 minutes at a temperature of 180 degrees. Pierce with a skewer, if the crumb is dry, it is ready. We cool in a container.

We cut the homemade cake with nuts into thick slices and serve a bite with tea, milk, compotes to the table.
