Lemon and mint jam

The perfect mix of flavors is lemon and mint jam! Such a delicacy will remain in your memory for a long time, and you will probably want to repeat its preparation, so feel free to add the recipe page to your bookmarks. Jam can be used as an additive for tea, especially for dinner (mint helps to relax), and in the preparation of desserts and pastries, cakes. It is best to cook it in the New Year's season, when the price of citrus fruits becomes lower, and, accordingly, you can buy more lemons for the same amount.

For dessert, both mint and lemon balm (it has a lemon aroma) are suitable. Remember that for such a preparation of sugar it will take a lot to neutralize the sour taste of citrus fruits!

Ingredients:

Lemon - 4 pcs.

Mint - 0.5 bunch

Sugar - 2.5 tbsp.

Water - 1 tbsp.

How to cook:

1. Place the citrus fruits in a sink or deep container and scald each of them with boiling water. With this action, aromatic oil appears on the surface of lemons and the peel becomes less bitter. Cut each fruit into eight parts horizontally and remove all seeds - this must be done so that you do not get them when tasting the treats. Then cut the lemons into slices or cubes as desired.

2. Place the lemon mixture in a cauldron or stewpan with a non-stick bottom. Wash the mint sprigs in water, separating one from the other. Place in a container with lemons.

3. Pour in water and add granulated sugar. Place the container on the stove, turn on moderate heat and simmer for about 20-25 minutes from the moment of boiling.

4. Then turn off the heating and cool for 4-5 hours. Heat again to a boil and cool. When it cools, the lemon peel will absorb the syrup, and the jam will thicken and change color, become transparent.

5. Heat the treat a third time on the stove. Hot it can be preserved in sterilized jars and stored for about six months both in the pantry and in the cellar, but in this case, it is better to remove the mint stalks so that they do not start to taste bitter.

Spoon the lemon and mint jam into jars / containers. Serve it to the table both warm and chilled - it is equally tasty and aromatic! Don't forget to top up your service with hot tea or coffee, toasted bread or butter toast.
