Buckwheat noodles or soba gained incredible popularity in our country not so long ago. But judging by the fact that now it can be found in any grocery store, it means that it is really loved and cooked. Dishes with it turn out to be hearty, tasty, and cook quickly, and the noodles always taste very tender. The most important thing to remember is that soba should be prepared exclusively according to the instructions, and the finished dish should not be left for tomorrow.
Ingredients:
Buckwheat noodles - 100 g
Chicken breast - 400 g
Onions - 40 g
Carrots - 50 g
Tomato - 1 pc.
Bulgarian pepper - 50 g
Celery stalk - 30 g
Garlic - 1 clove
Vegetable oil - 2 tablespoons
Salt to taste
Ground black pepper - to taste
Parsley - 10 g
How to cook:
Prepare foods on our list. Peel the onions, garlic and carrots, wash with the rest of the vegetables and chicken fillet, wipe dry with paper towels.
Heat vegetable oil in a large skillet, fry the chopped onions and carrots in it for 2 minutes.
Peel the bell pepper from seeds and stalks, cut it and celery into strips, add to the pan, fry everything together for 5 minutes.
Then cut the chicken fillet into small pieces, add it to the vegetables and cook for another 5 minutes.
Cut the tomato into halves or quarters, grate the pulp on a coarse grater, discard the skin. Add the tomato and crushed garlic clove to the skillet and add water to cover the chicken halfway. Season with salt and pepper to taste, simmer for another 5 minutes over low heat.
Put a saucepan with water on the stove, salt it, boil the soba according to the instructions. Very often it takes from 4 to 6 minutes, I have never met it longer. Throw the noodles in a colander, rinse with cold water.
Transfer it to a frying pan, mix everything thoroughly, add a little more salt and pepper.
Divide the cooked buckwheat noodles with chicken and vegetables into portions, sprinkle with fresh herbs and serve immediately.
Do not leave buckwheat noodles in the gravy for a while, as it will absorb all the sauce and swell very much.
