There are a huge number of vegetable soups. They are very popular not only among vegetarians or fasting people, now these soups are becoming the number one food for adherents of proper nutrition. Today we will prepare an easy and healthy, but, most importantly, low-calorie vegetable soup made from seasonal vegetables. It is ideal if you are on a weight loss or maintenance diet. It is quick and easy to cook, with little skill it can take you less than 30 minutes to cook.

Ingredients:

Peking cabbage - 150 g

Carrots - 50 g

Potatoes - 150 g

Onions - 50 g

Celery stalk - 1 pc.

Bulgarian pepper - 100 g

Olive oil - 1 tsp

Sea salt - to taste

Ground pepper - to taste

We will prepare all the products according to the list. Onions, carrots, potatoes - all this needs to be peeled / peeled and washed under cold running water.

Disassemble the Chinese cabbage into leaves, wash each separately, since there is often a lot of sand or earth inside the head of cabbage. Throw the leaves into a colander to drain all the water.

In a small saucepan or deep-bottomed saucepan, heat just a little olive oil, lightly simmer onions and carrots, chopped into small cubes.

Pour in half a liter of water. When it boils, add the diced potatoes, let it simmer for 10 minutes.

Peel the bell pepper from the stalk and seeds, remove the cotton membranes inside, cut it into the same small cube, put it in a saucepan. Cook for another 4-5 minutes.

Now thinly chop the Peking cabbage and stalk celery. We add them to the soup together.

Add water to the top of the pan, after boiling the water, cook these vegetables for no longer than 5 minutes so that all the nutrients are preserved. Salt and pepper the dish to taste.

That's all. Pour the diet soup into portioned bowls and serve as a homemade first course for lunch. Simple, tasty and very low in calories.
