Sugar - 2 tablespoons

Milk - 125 ml.

To prepare a sweet omelet, we will prepare the necessary products.
We need two deep containers. It is very important that they are clean and dry. Separate the whites into one, and the yolks into the second. Beat the first with a pinch of salt until strong, persistent peaks.
Add sugar to the yolks and use a mixer to combine the ingredients. The mass should become fluffy and turn white. You can add a little more vanilla sugar or essence if desired.
Pour room temperature milk into a bowl with yolks and add sifted wheat flour. Let's mix.
Then carefully add the prepared proteins. Stir from bottom to top to maintain the airy texture of the dough.
Grease the bottom and sides of the pan with butter and heat well. Transfer the dough and smooth the surface with a spatula.
Cover the pan with a lid and cook over low heat until the bottom begins to brown and the top is no longer damp. It will take about 5-7 minutes, it is better to review it periodically.
When the upper part grabs, use a spatula to divide the omelet into four parts, and then turn it over to the other side.
Bring the dish to readiness within a minute; you do not need to cover with a lid. Divide it into small pieces and transfer to plates.
A very fluffy, delicious sweet omelet is ready.
Serve it warm, preferably with a cup of aromatic tea. Garnish with fresh berries and sprinkle with icing sugar before serving.
