Buckwheat with meat in pots is definitely very popular in Russian cuisine. The delicious taste of the dish is achieved precisely thanks to the clay pots. They seem to seal the entire juice of the products inside, due to which each ingredient fully absorbs the taste and smell of the accompanying components. Thus, ordinary buckwheat can be cooked much tastier and richer.
Buckwheat goes well with any type of meat, so you can choose it at will. Additional ingredients will be vegetables - carrots and onions.
In order to simplify preparation as much as possible, the components in the pot can not be laid out in layers, but mixed in advance. It is very important to observe the proportions of cereal and water in order to achieve the correct consistency of crumbly buckwheat.
Ingredients:
Buckwheat - 250 gr.
Drinking water - 500 ml
Beef - 300 gr.
Onion - 1 pc.
Carrots - 1 pc.
Vegetable oil - 2 tablespoons
Butter - 10 gr.
Salt, pepper - to taste
Parsley (for serving) - 20 gr.
How to cook:
Prepare food.
Peel off the top layer from root crops, rinse. Chop the carrots into slices in the shape of triangles, chop the onion into cubes.
Heat a frying pan on the stove to a peak, pour in some of the oil. First, lower the onion slices inward. Saute the vegetable separately for about 1 minute. Next, add the carrot slices.
Next, fry the vegetables together over medium heat, stirring occasionally with a spatula. The frying time is 5 minutes.
Rinse the meat, cut into small pieces. Move the vegetables to the side for a while, pour in a little oil, heat it, then lower the beef to the surface, rubbing it with salt and pepper. Increase the fire. When the meat is well browned on both sides, stir in the vegetables.
Sort the buckwheat, rinse, remove the liquid. Load it into the pan to the main composition.
Stir, fry the buckwheat just a little together with meat and vegetables, so that it is slightly saturated with aromatic oil.
Prepare 2 earthenware baking pots. Divide the contents of the pan into two parts, load into the pots.
Next, pour in hot water so that it completely covers the mixture and is about 2 fingers higher. Close the pots with special lids, load into an already preheated oven.
Bake for 40 minutes. The optimum temperature is 180 degrees. You do not need to stir the contents of the pots during the baking process.
After cooking the porridge in the pots, throw in a piece of butter. Add chopped greens to the buckwheat with meat and transfer to a plate.
