Rice kutia with raisins is traditionally prepared for the Christmas table. To improve the taste, add various dried fruits, candied fruits, sun-dried berries and fruits, which can be changed or supplemented, focusing on your taste. The finished dish is seasoned not only with honey, but also with sugar, condensed milk, liquid jam. Prepare a fragrant and tasty kutya according to this recipe and treat your relatives at the festive table.

Ingredients:

Rice - 100 gr.

Raisins - 50 gr.

Salt - 1 pinch

Dried apricots - 50 gr.

Prunes - 50 gr.

Walnuts - 50 gr.

Poppy - 2 tablespoons

Honey - 2-3 tbsp.

Measure out all the foods you need to make rice kutya. If any of the dried fruits from this recipe are not to your taste, replace with others. When using candied fruits, you do not need to pour boiling water over them. It is enough just to cut into small pieces.

Walnuts can also be substituted for almonds, cashews, or peanuts. It is advisable to dry this ingredient in a dry frying pan and remove the husk.

Long grain or round rice will do.

Transfer the cereal to a deep bowl. Add cold water. Rinse the seeds by rubbing them with your fingers. Repeat this procedure several times until the water runs clear.

In a separate saucepan, bring a quart of water to a boil. Salt a little. Pour the washed rice into boiling water. Stir and let it boil.

From the moment it boils, cook for 15 minutes, until tender. When cooking, set the heat to low so that the liquid in the pan does not boil too much. Thanks to this method of cooking, the rice grains do not stick to each other, and the kutia turns out to be crumbly.

Place the rice in a colander and rinse well under running water. Leave it on for 10-15 minutes to remove any remaining liquid.

Rinse all dried fruits several times with warm water. This will wash off all the dirt and dust from their surface. Pour boiling water over for 5-7 minutes.

Pour boiling water over the poppy seeds and leave to swell for 10-15 minutes. You can use hot milk instead of boiling water.

Cut the walnuts into small pieces.

Throw the dried fruits on a sieve. Dab well with a paper towel. Chop dried apricots and prunes to small pieces.

Transfer the swollen poppy seeds to a fine mesh strainer to remove any remaining liquid.

Transfer the swollen poppy seeds to an earthen bowl and rub with a pestle (macogon) until milk appears. If you have a shredder, use it.
