On strict days of fasting, it can be cooked without adding vegetable oil, on more gentle days, with it. Do not forget to sort out the cereals before cooking, removing burnt black grains and other debris.

Mushrooms can be used any edible, not oily, for example, ordinary champignons or oyster mushrooms. Buckwheat is also tasty with pickled mushrooms. Be sure to add onions - it gives the porridge its taste and aroma. You can add carrots to the dish, cutting them in the same way as the onions.

Ingredients:

Buckwheat - 150 g

Water - 300 ml

Mushrooms - 150 g

Bulb onions - 1 pc. (small)

Salt and pepper to taste

Prepare food.

Sort the buckwheat, rinse in water and pour into a cauldron or stewpan with a non-stick bottom.

Add salt and a little ground black pepper. Since the cereal itself has a bitter taste, you do not need to add bay leaves when cooking it - they will only strengthen it.

Peel the onions, rinse in water, cut into half rings or small cubes, if desired. Add to buckwheat. This type of onion can be replaced with any other, even green.

Rinse fresh mushrooms in water, cut them in half and cut into slices, put in a cauldron. Pour in hot water. Since during heat treatment, mushrooms release about 40-50% of the liquid and decrease in size, then instead of 1 part of cereal and 3 parts of liquid, use a ratio of 1 to 2. The required amount of liquid will be filled with mushrooms. Mix the contents of the container gently.

Cover the cauldron with a lid, place on the stove, turning on minimum heat. Simmer the buckwheat porridge for about 25-30 minutes without opening the lid.

Then turn off and let the dish steep. Add some unrefined vegetable oil if desired and stir.

Put the lean buckwheat with mushrooms in portioned plates or bowls, serve hot. You can supplement the dish with chopped fresh herbs.
