Today we are preparing a light, delicious soup with minced chicken meatballs, namely fillet. The soup is suitable for both adults and children, losing weight and not losing weight! The option is absolutely for everyone.

Ingredients:

Minced chicken - 300 gr.

Carrots - 1 pc.

Onions - 1 pc.

Sweet pepper - 1 pc.

Potatoes - 2 pcs.

Salt to taste

Bay leaf - 1 pc.

Allspice peppers - 3 pcs.

Ground black pepper - to taste.

Chicken broth - 1.5 l.

Step by step recipe:

Prepare all the ingredients you need. I suggest a simple option without noodles or rice, but if you want a richer soup, add one of your choice. I used pre-cooked chicken broth, if not, then plain clean water will also work.

Use any vegetables, fresh or frozen. These are great: green beans, fresh frozen green peas, broccoli, cauliflower and others.

In the choice of spices, I settled on the classic ones.

Cut onions and carrots into small cubes. Dip the chopped vegetables in the boiling broth and cook for 10 minutes over medium heat.

Cut the potatoes and peppers into small pieces. Send them to the rest of the vegetables in the chicken broth. Add bay leaves and peppercorns.

Pour salt and pepper into the minced chicken, spices according to your taste. If it turns out to be liquid, then add a little potato or corn starch. This will make the minced meat denser and keep the shape of the meatballs during cooking. Stir it well and thoroughly and beat it against the sides of the bowl until it becomes smooth and firm.

Wet your hands with water and roll up small balls, place them on the board.

10 minutes after laying the potatoes, add the prepared meatballs, stir with a spoon so that they do not stick to the bottom. Season the soup with salt and season to taste.

Cook for another 10 minutes. Chicken meatballs cook very quickly.

Serve the soup sprinkled with herbs, with croutons or bread.
