Lean cabbage patties do not have to be cooked in Lent. They are great if you are a vegetarian or on a diet. To reduce the calorie content of ready-made cutlets, it is better to bake them in the oven. The recipe is very simple and doesn't take a lot of time to prepare.

Ingredients:

White cabbage - 500 gr.

Bulb onions - 140 gr.

Garlic - 20 gr.

Wheat flour - 30 g

Semolina - 30 g

Salt to taste

Ground black pepper - 2 pinches

Ground paprika - to taste

Hmeli-suneli - to taste

Vegetable oil - 3 tbsp.

Step by step recipe:

Prepare all the ingredients for making lean cabbage patties. The amount of garlic can be reduced.

Remove some of the top leaves from the head of cabbage and remove them. They are usually shabby and very dirty. Rinse the cabbage. Cut into large pieces.

Boil water in a large saucepan. Salt it. Dip the chopped cabbage. Let it boil. From the moment it boils, cook over moderate heat for 9-10 minutes. During this time, the cabbage slices will become softer.

Throw the boiled cabbage in a colander and immediately rinse with cold water to suspend the thermal process. Leave for a while to let the glass liquid.

Pass the cooled cabbage through a meat grinder. Squeeze out excess juice. For this purpose, it is most convenient to use gauze folded in several layers. If the cabbage mass is very liquid, you will need a lot of semolina or flour.

Peel and rinse the onion and garlic. Cut the onion into pieces for easy chopping.

Pass the peeled ingredients through a meat grinder or blender. Squeeze the juice in the same way. Add the onion and garlic to the cabbage mass and mix well.

Add all the semolina and about a third of the flour. Stir in the cabbage mixture. Leave some of the flour for breading.

Sprinkle salt, ground pepper, paprika, suneli hops to taste. Stir. You can experiment with spices.

Form small round pieces from the minced cutlet. Zip in flour.

Heat oil in a skillet. Lay out the cabbage patties. Fry on one side over medium heat for 3-4 minutes until golden brown.

Turn over and continue frying in the same mode until the other side is browned.

Place the fried patties on a paper towel. Thanks to this step, the bulk of the remaining oil will be absorbed, the cutlets will not turn out so fat.

Serve them warm with sour cream, homemade adjika or other suitable sauces.
