Ingredients:
Kefir - 300 ml
Egg - 1 pc.
Sugar - 40 g
Flour - 150 g
Salt - 3 g
Vegetable oil for frying - 50 ml
Step by step recipe:
To make kefir pancakes without soda at home, take the foods on the list. Use a fermented milk drink of any fat content and room temperature. If desired, add "flavoring" additionally: vanilla sugar, ground cinnamon, other.
Pour the egg into a working bowl, beat with a mixer for about a minute at maximum speed until fluffy, a noticeable increase in volume and complete combination of the protein with the yolk.
Add granulated sugar and a little salt to balance the sweetness and enhance the flavor. We continue to beat for another half a minute. Adjust the dosage of salt-sugar to suit your preferences.
Now add wheat flour and mix by hand until a dense mass is formed. If the lump is too tight, pour in some of the kefir at this stage.
Then we dilute with the remaining liquid: kefir (or yogurt). Mix thoroughly in a circle, make the mixture more liquid and at the same time remove all lumps.
The consistency of such a dough is similar to 20% fat sour cream.
We fry the pancakes without soda in the usual way, like any others. Warm up the frying pan, pour in refined oil, spread the dough in "islands" for one and a half to two tablespoons, with some distance so that they do not stick together. Blush on both sides. Remove excess fat with a paper towel.
We serve pancakes for breakfast, afternoon tea and warm tea, with sour cream, jam, honey - bon appetit!
