A simple and tasty dish that can be served as a side dish for meat or baked fish is boiled beet salad. Moreover, it is best to boil the root crop in advance for 25-30 minutes (depending on its size) and cool. Also, the vegetable can be boiled or baked in the evening in order to please your loved ones in the morning with a healthy dish, the composition of which you are free to choose to your liking, without changing the main ingredient. Fresh and pickled cucumbers, pickled green tomatoes, canned peas, capers, boiled carrots are ideally combined with boiled beets, pickled onions, etc. If you decide to add prunes, remember that a dish with such ingredients is not seasoned with vegetable oil, but mayonnaise.

Ingredients:
Boiled beets - 1 pc. (large)
Fresh cucumber - 1 pc.
Red onion - 1 pc. (small)
Parsley - 3-4 stalks
Vegetable oil - 1 tbsp.
Salt and pepper to taste
Apple cider vinegar - 2 tablespoons
Boiling water - 100 ml
How to cook:
Prepare the food you need.
Boil the root vegetable, cool to room temperature. Peel and rinse it.
Peel the red onion, cut it into small cubes and pour into a deep container. Pour in boiling water combined with apple cider vinegar and leave for 3-5 minutes to remove the bitterness. Almost any type of onion sold in a supermarket or store contains bitterness (except for white and Crimean purple), so it's better to minimize it. Then drain the marinade.
Wash a fresh cucumber in water, cut off the tails from both sides of the vegetable and cut into plates, and then into medium cubes. Add the slices to the bowl to the steamed onion mixture.
Cut the beets into slices, then cut them into the same cubes as the fresh cucumber. Add to the rest of the ingredients.
If you baked a root vegetable, then after cutting, let the juice drain from the cubes and only then add to the container.
Sprinkle salt and ground black pepper to taste, add chopped washed parsley or dill. Gently mix everything by pouring in odorless vegetable oil, refined.
If desired, for adults, you can additionally compress a clove of garlic, previously peeled and washed.
Place the diet salad of boiled beetroot, cucumber and onion in bowls or on a platter. Serve immediately before the beetroot juice stains other ingredients.
