Today we are preparing a very tasty, nutritious and satisfying, but at the same time dietary, vegetable soup with meatballs. My people at home love it very much because of the meat balls themselves, so I cook it often.

For meatballs, you can take any minced meat, but, for my taste, the most tender ones are obtained from chicken meat. It is very convenient to have in stock various vegetables frozen since summer, they often help out in preparing such simple and tasty dishes in winter.

Ingredients:

Chicken fillet - 450 gr.

Carrots - 1 pc.

Potatoes - 400 gr.

Bulb onions - 2 pcs.

Vegetable oil - 60 ml.

Water - 2 liters.

Chicken eggs - 1 pc.

Green beans - 150 gr.

Sweet pepper - 150 gr.

Salt and spices to taste

We prepare products according to the list. The set of vegetables can be replaced according to your taste, even frozen ones will do.

Scroll the chicken fillet in a meat grinder. We clear sweet peppers from seeds and partitions if we use fresh, not frozen.

We put a pot of water on the stove, bring to a boil. At this time, we prepare the potatoes: peel, wash and chop finely. After boiling water, dip the potato slices in boiling water. We look forward to re-boiling and reduce the heat to a minimum.

In the meantime, prepare the vegetable fry. Chop carrots and onions.

Preheat the frying pan a little. Pour in vegetable oil, pour vegetables into it and fry them slightly over low heat. They should be saturated with oil and soften, but not burn in any way.

Add the vegetable frying immediately after cooking to the potatoes. Next, put the defrosted vegetables into the pan - green beans and bell peppers. Salt the soup.

Add chopped onions to the minced meat, an egg (you can only have protein, suddenly you have unused one), salt and spices to taste.

We sculpt the meatballs the size of a walnut or slightly smaller and immediately put them in the boiling soup.

Cook the dish for another 7-8 minutes. We take a salt test. Turn it off and let it brew a little before serving.

Our delicious vegetable soup with chicken meatballs is ready. Serve with any finely chopped herbs, fresh onions or garlic and bread.
