Ingredients:
Sauerkraut with cranberries - 300 g
Onions - 1 pc.
Champignons - 100 g
Olive oil - 30 ml
Greens - 20 g
Lime or lemon juice - 1 tsp l.
Salt, black pepper - to taste
Step by step recipe:
To prepare the salad first ferment the cabbage or buy ready-made, and also take the rest of the products on the list. In addition to fresh or frozen mushrooms, you can add pickledor canned. If the cabbage is with cranberries, with bitter sour and wine berries, the salad will come out more tonic.
The fleshy mushrooms, the better the appetizer. We wash the mushrooms thoroughly, chop them arbitrarily, but rather coarsely - for example, with longitudinal slices. These are clearly felt in a crispy heap of vegetables and bring a variety of textures.
Fry mushroom slices in a hot pan with the addition of refined lean oil. Shake or stir and golden until light crust at high temperature for 3-4 minutes. If you fry frozen champignons, the time increases - you need to first evaporate all the resulting moisture.
Then cool the fried mushrooms for a couple of minutes.
Chop the peeled onion into thin, transparent half rings or straws. Do not fry the onion in oil, but leave it raw, spicy, sharp and fresh.
Combine sauerkraut with cranberries and cooled fried champignons with butter, chopped onions in one bowl.
Throw in a handful of finely chopped dill or other seasonal herbs. Often, a clove of garlic is also included in the salad: after peeling it off, it is passed through a press or cut finely and finely.
Stir from bottom to top. We increase the effect of freshness by sprinkling with sour citrus juice - lime or lemon. You can replace it with natural vinegar or completely eliminate it (sauerkraut itself is wine and vigorous). Season with ground pepper, salt if necessary.
Serve a delicious salad with sauerkraut and mushrooms to the table.
