Soft, flexible, thin pancakes are tasty even empty, but go well with any filling: from sweet (curd, berry, fruit) to fish, meat, mushroom, vegetable and cereal. They are suitable for assembling all kinds of pancake pies.

The basis of the dough is milk, but for the appearance of small holes (openwork effect) we also introduce kefir. In a fermented milk environment, slaked soda activates the fermentation process, the mixture begins to bubble, foam, and when baked, these same bubbles burst, forming holes / holes on the surface of the pancakes. The less dough is poured into the pan, that is, the thinner the pancake, the more visible the through pattern.

Ingredients:

Flour - 150 g

Eggs - 2 pcs.

Milk - 400 m

Kefir - 100 ml

Soda - 0.5 tsp l.

Vinegar - 1 tsp l.

Sugar - 2 tbsp. l.

Salt - 0.3 tsp l.

Vegetable oil - 30 ml

To bake fishnet pancakes with milk at home, take the foods listed. If desired, the dough is flavored with vanilla, cinnamon (for dessert, sweet table).

In a small bowl, pour baking soda with table vinegar or wine vinegar (you can use lemon juice), stir, remove all dry lumps and foam / extinguish.

Then we dip the soda solution into kefir at room temperature and beat thoroughly. The mixture begins to foam quickly.

Add sugar, salt, as flavor enhancers, and eggs. We continue to shake vigorously with a whisk. Fully dissolve the egg whites and yolks.

Pour in wheat flour and at this stage knead until a dense consistency. We remove the lumps in order to obtain a homogeneous pancake dough in the future.

We dilute the thick flour mass with milk, add lean refined oil.

Kneading the dough for openwork pancakes, continue to beat. We saturate with oxygen - bubbles are needed. When frying, also periodically shake the dough with a whisk until foam appears on the surface.

Bake in a hot frying pan: for the first time, lightly cover with fat: vegetable oil or lard. We dry it from below (holes-holes appear on top) for about half a minute, then turn it over and blush on the back for 15-20 seconds.

We serve delicious openwork pancakes with warm holes, for example, with sour cream or yogurt.
