Kefir - 400 ml

Semolina - 5 tbsp. l.

Eggs - 2 pcs.

Wheat flour - 3 tbsp. l.

Sugar - 2 tbsp. l.

Baking powder - 0.5 tsp l.

Salt - 0.25 tsp l.

Vegetable oil - 20 ml

To cook pancakes on kefir with semolina, take the products from the list. Various fermented milk drinks are suitable for the recipe: curdled milk, yogurt, and others. If replacing with milk, baking powder can be eliminated.

Beat eggs, granulated sugar and a pinch of salt first in a deep bowl. When planning to cook sweet patches, adjust the sugar as you wish. Additional flavors such as vanilla sugar, ground spices, liquid confectionery concentrates are also suitable. Shake intensively with a whisk, completely combining the egg whites with the yolks.

Pour semolina into the egg mixture, stir until thick.

For the dough to obtain the required viscosity, gluten is also needed. Therefore, we throw two or three tablespoons of premium wheat flour along with a portion of the baking powder. We continue kneading with quick circular movements. We remove all dry lumps, bring to a single density.

Then we dilute the viscous mass to a liquid texture typical for pancake dough: pour in kefir at room temperature and lean refined oil. Once again, beat all the ingredients vigorously.

We bake thin pancakes on kefir with semolina, like any others, on a hot and slightly oiled surface. Pour about a third of the pancake dough ladle into the pan, turn. Bake the pancake on both sides until golden brown.

If you need soft ones, for example, for rolling with filling, cover the baked pancakes (with a lid or plate). When steamed, brittle and crispy edges will instantly soften.
