Filled sweet pies are most often made with cherries. It is thanks to its sourness that it sets off the sweet crust and, as a result, a pleasant-tasting pastry is obtained.
Today we will bake a dough pie, which is very similar to shortbread, but in structure it is more tender and soft. The filling will be cottage cheese, which is very good "friends" with such dough and berries.
Cherries can be used both fresh and frozen. And if there is, then - canned or from compote. It is important that it is pitted.

Ingredients:
Butter - 100 grams
Sugar - 200 grams
Wheat flour - 150 grams
Chicken eggs - 4 pcs.
Cottage cheese - 400 grams
Baking powder - 1 tsp
Frozen cherries - 400 grams
Corn starch - 1 tbsp
Vanilla sugar - ½ tsp
Salt - 1 pinch
Step by step recipe:
Prepare all the ingredients you need. I did not defrost the cherries beforehand.
Be sure to use dry cottage cheese with a high% fat content. If you come across a liquid product, then you will need to add a little flour to the filling.
Remove the butter from the refrigerator beforehand so that it becomes very soft. Use corn starch whenever possible. If you don't find it, replace it with potato or flour.
Put the frozen cherries in a bowl and add the starch, mix gently and put in a cold place.
Whisk very soft butter with 100 g sugar. It is not necessary to beat strongly until fluffy, only so that the mass turns white a little and the granulated sugar dissolves.
Beat two eggs into the butter mixture and mix well with a whisk. A mixer can be used.
Add sifted flour with baking powder and salt.
Stir the mass first with a whisk or mixer, and then with a spatula. You should have a sticky dough.
In a baking dish with a diameter of 24 cm, spread the resulting mass in an even layer. There is no need to lubricate the container, since the dough contains a fairly large amount of oil.
Whisk the cottage cheese, remaining granulated sugar, vanilla sugar and two eggs. For a more uniform filling, you can use a blender or rub the curd through a sieve.
Place the curd filling on top of the dough and smooth.
Place the cherries on top with the starch and bake the cake in a preheated oven to 180 degrees for 45-50 minutes. Focus on your oven.
The cake should brown well on the sides. Cool it in shape.
Sprinkle with powdered sugar and serve with tea, coffee or compote.
