Delicious and quite easy-to-prepare homemade Karpatka cake is perfect for a family tea party on a weekend. Karpatka cake is very popular in Poland. Its appearance is somewhat reminiscent of the snow-capped mountains of the Carpathians, hence its name.
This homemade cake turns out to be very tender. Airy choux pastry cakes and a lot of delicate cream filling will not leave anyone indifferent.
Cooking Karpatka cake is not difficult, every housewife can cook it. It is great as a weekend dessert. However, it will also be appropriate on the festive table.
Prepare Karpatka cake with custard for your family, it's simple and delicious!

Ingredients:

(the recipe uses a glass of 200 ml)

Dough:

  • eggs - 5 pcs.
  • flour - 1 tbsp.
  • water - 1 tbsp.
  • butter - 100 g
  • baking powder - 1/2 tsp l.
  • salt -1/3 tsp l.

Cream:

  • starch - 4 tbsp. l.
  • flour - 4 tbsp. l.
  • butter - 200 g
  • sugar - 1 tbsp.
  • milk - 3 tbsp.
  • vanilla sugar - 10 g
  • egg yolks - 2 pcs.
  • powdered sugar - for decoration

Step by step recipe

1. We start cooking by kneading the dough.
Pour 1 tbsp into a saucepan. water, add 1/3 tsp. l. salt and 100 g of butter.
We put the saucepan on the fire and bring all this mass to a boil.

2. As soon as the water and oil boil, reduce the heat to low and add 1 cup flour and baking powder.
Knead everything quickly with a spoon, without removing the pan from the heat. A sign that the dough is properly brewed and ready is that the dough has gathered into a lump and is smooth.

3. Remove the cooked dough from the heat and wait a few minutes for it to cool slightly.
Add 5 eggs one by one to the slightly cooled dough. After each, knead the dough thoroughly until smooth.

4. Cover the baking dish with parchment paper. Grease the parchment paper with butter.
Put half the dough into the mold and distribute it evenly. The size of my mold is 25 * 25 cm.
I will bake 2 cakes. You can also bake one large crust on an oven baking sheet and then cut it in half.

5. We put the dough in preheated to 200 degrees. oven and bake the cake for about 30-35 minutes.

6. Remove the baked crust from the mold, remove the parchment paper and let it cool.
We bake the second cake in the same way.

7. Now let's prepare the cream.
Pour 2 cups of milk into a saucepan and put on fire.

8. Pour flour and starch into a separate bowl. Mix well.

9. Add the yolks to the flour mixture and mix again, as much as possible.

10. Add the remaining glass of cold milk to this mixture in small portions, stirring constantly. Add milk in small portions so that no lumps form. As a result, you should get a homogeneous mass.

11. After boiling milk, pour 1 glass of sugar into it and add vanilla sugar. Dissolve sugar in milk and wait for it to boil again.

12. As soon as the milk boils again, pour the prepared mixture into it in a thin stream, stirring constantly.
Cook the cream over medium heat without stopping to stir until boiling. As soon as the cream thickens and begins to boil, remove it from the heat.
Let the custard base cool to room temperature.

13. The custard base has cooled down.
Whisk the softened butter

14. Add the custard base in small portions to the whipped butter. Beat the cream well each time.

15. We collect the cake in the form in which the cakes were baked. Put the first cake on the bottom of the mold and pour all the cream on it. Spread the cream evenly over the cake.

16. Put the second cake on top of the cream.
Also, the cake can be assembled without a mold.
Put the assembled cake in the refrigerator for at least 3-4 hours, and preferably overnight.

17. Take the cake out of the mold and decorate it with powdered sugar on top.

Here is such an original, unusual and very tasty Karpatka cake. This cake perfectly combines choux pastry cakes and soft and delicate butter cream.
