Who doesn't like cheese cakes, pancakes, pancakes, pancakes for breakfast? There are really few of them. So we have been accustomed from childhood, in the morning our parents or grandmothers often cooked something of this for us. And it is, however, delicious, especially with a bite with honey, jam. Some people like to pour pancakes with liquid caramel or condensed milk.
Today we are preparing kefir pancakes with cottage cheese. Fragrant, fluffy, with a slight curd sourness - this breakfast option will be appreciated by the whole family!

Ingredients:
Cottage cheese - 250 grams
Chicken eggs - 2 pcs.
Sugar - 2 tablespoons
Vanilla sugar - 1 tsp
Kefir - 1 glass
Baking soda - 5 grams
Salt - 1 pinch.
Wheat flour - 250 grams
Sunflower oil for frying - 100 ml.
Step by step recipe:
Prepare all the ingredients you need to make the curd pancakes. Kefir is suitable for any fat content, but it is better if it is 2.5% or more. Heat it to a slightly warm state.
Choose cottage cheese dry, fatty, preferably if it will be homemade. The main thing is that this product is not very sour, so it will ruin the whole taste of the dish.
Adjust sugar at your own discretion. It is permissible not to put it at all, since you will still serve pancakes with sweet sauces. I stopped at the minimum amount, it turned out just not cloying.
Break eggs into a bowl, add granulated sugar and vanilla sugar. Use a whisk or mixer to beat until light foam. It is not necessary to beat strongly, it will be enough to dissolve the sugar and mix the eggs well.
Add cottage cheese. I did not pierce it with a blender and did not pass it through a sieve, as I like it when curd grains are slightly felt in the finished dish. If you want the cottage cheese not to be felt at all in the pancakes, then grind it.
Pour kefir into the egg-curd mixture and mix well. Here you can use a blender to end up with a smoother, lump-free dough.
Add sifted flour, salt and baking soda. The latter can be replaced with a baking powder, but then you will need to double the amount.
Stir the dough until smooth and immediately start baking pancakes.
Pour some oil into the pan, heat it. Reduce heat to low-medium and spoon out dough, keeping distance, as the pancakes will increase significantly in size. Cook on one side for about 3 minutes, turn over with a fork or spatula, cover and cook for another 2 minutes.
Do this with the entire dough, adding oil gradually as needed. Remove the finished pancakes from the stove, put on a paper towel to remove excess oil.
Call everyone to the table and serve pancakes with delicious aromatic tea, honey, sour cream, jam or whatever you love.
