Ingredients:
Beef liver - 350 gr.
Carrots - 1 pc.
Bulb onions - 1 pc.
Sour cream 25% - 3 tbsp
Water - 200 ml.
Wheat flour - 2 tsp
Bay leaf - 1 pc.
Vegetable oil - 60 ml.
Salt to taste
Step by step recipe:
We prepare the necessary products according to the list. It is better not to defrost the liver until the end before cooking, or freeze it a little if it is fresh or chilled, as this will greatly facilitate cutting it. The pieces then turn out to be the same and even.
Beef liver is not bitter, and therefore it is not soaked, like pork liver, in milk to get rid of the bitterness. It is only necessary to remove the film and streaks. Cut the offal into slices.
Peel and wash the onions and carrots. Chop the first, grate the second on a coarse grater.
Heat the vegetable oil. Make the fire small. I used refined vegetable oil, you can replace it with lard.
Lay out the pieces of liver. Fry for a couple of minutes, stirring constantly, so that nothing burns. During this time, the liver will change color to light.
Add prepared vegetables immediately - carrots and onions, as well as a laurel leaf. A clove of garlic can be used instead of the latter. Season with salt and pepper to taste. Cover the pan with a lid. So, cook for 3-4 minutes, mix a couple of times during this time for even frying.
Stir sour cream, salt and flour in water. At this stage, you can add tomato paste, 1 tablespoon will be enough.
Remove the bay leaf from the pan. Add a sour cream fill.
Cook after boiling for 8-10 minutes. You can add more spices or fresh herbs.
