Tortillas can be made from different doughs, but the most delicious are obtained with kefir. These are prepared very quickly and easily, since you do not need to mess with yeast.
Salt, soda and sugar must be added to the dough, which will soften the sourness of kefir. Eggs are used to maintain structure so that the dough is more uniform. Vegetable oil adds elasticity. The use of other ingredients depends on personal preference, it can be cheese, herbs or any other filling.
Kefir-based flatbreads retain their volume and softness longer. They can be served alone or as a complement to salty meals instead of bread.

Ingredients:
Kefir - 125 ml.
Flour - 200 gr.
Eggs - 1 pc.
Soda - 0.5 tsp.
Vinegar - 0.5 tsp
Granulated sugar - 1 tsp
Salt - 0.3 tsp
Vegetable oil - 1 tablespoon (+ 2 tablespoons for frying)
How to cook:
Prepare food.
Pour kefir into a deep container, beat in an egg to it. The temperature of the food does not matter. Add the right amount of sugar and salt.
Pour in vegetable oil.
Stir the mixture thoroughly with a whisk until smooth.
Add a little flour to the liquid mass, 3 tablespoons are enough, thereby preparing the dough for the introduction of soda. Stir it into the mixture.
Quench the baking soda with vinegar. When the reaction is complete, add it to the main composition and mix.
Then add the rest of the flour. It should already be sifted.
Knead to a tight but soft dough. It will stick to your hands a little. Cover it with plastic foil, set aside for 10 minutes.
After a while, roll a piece of dough into a thick roll, cut into equal pieces.
Roll each piece with a rolling pin, getting a flat cake. Be sure to sprinkle the surface with flour so that the dough does not stick to it. Make a few punctures on top with a fork so that the workpiece does not swell during frying.
Heat the frying pan on the stove, grease with a little oil. Set the fire to medium. Place the workpiece on a hot oily surface, cover the pan with a lid.
Fry the tortillas alternately on both sides until lightly browned, about 2 minutes on each side. They will rise and grow significantly in size.
