To celebrate the bright holiday of Easter, it is not enough just to decorate the eggs and bake butter cakes. The main dish is Easter cottage cheese. For its preparation, a special split form (pasochna) is used. It looks like a truncated pyramid and symbolizes Mount Calvary.

Ingredients:

Cottage cheese - 550 g

Sugar - 120 grams

Sour cream - 100 grams

Butter - 100 grams
Egg yolks - 3 pcs.

Dried cranberries - 150 grams

Vanilla sugar - to taste

Orange zest - 1 pc.

For decoration:

Chocolate - 30 grams

Almond petals - 1 tbsp

Prepare products for making Easter cottage cheese. It is advisable to use homemade cottage cheese, of medium humidity and acidity, fat content not less than 5%. In addition to dried cranberries, you can use any dried fruits and nuts if desired.

In a bowl, combine granulated sugar, vanilla sugar and zest removed from one orange. Use a spoon to grind the mixture so that the essential oils are absorbed into the sugar crystals.

Add egg yolks from three eggs to the fragrant sugar mixture (proteins are not used).

Stir the mixture with a spoon. Thanks to the orange peel, the mass will acquire a bright yellow color.

Add cottage cheese, softened butter and sour cream.

Using a blender, beat the mixture until creamy. Transfer to a saucepan and heat it over just below medium heat.

Stir the mixture continuously with a wooden spatula, bring it until the first signs of boiling appear and remove from heat. The mass will become more fluid. You need to let it cool completely.

Rinse the cranberries in advance and put them on a napkin to get rid of excess moisture. Pour it into the curd mass and stir.

Place the detachable form on a plate with a flat bottom and cover with a double layer of moistened gauze, being careful not to create wrinkles. Put the curd mass inside. This amount of products is just enough to fill a form in size: height -12 cm, lower base - 11.5 x 11.5 cm, and upper - 5.5 x 5.5 cm.

Fold the edges of the gauze on top and put the mold in the refrigerator. Leave for 10-12 hours, periodically draining the emerging serum. You can also put a load on top so that the mass compresses faster.

After a while, take out the pasta, turn it over on a flat dish with its wide side and remove the form. Remove the gauze carefully, taking care not to damage the pattern.
