Delicate, enveloping creamy pasta sauce is a versatile addition to pasta of various configurations and from all varieties of wheat. Horns, shells, butterflies, spaghetti or short noodles will become even more appetizing.

Ingredients:

Cream 10% - 200 g

Flour - 1 tbsp. l.

Butter - 30 g

Cheese - 30 g

Salt, hot pepper - to taste

To make a silky, creamy pasta sauce, take the food listed. Milk cream can be either 10% or very fat, but liquid. It all depends on your personal preference. If replaced with milk, the flavor and texture will be reduced. Season additionally with nutmeg, all sorts of spices and hot spices.

Much depends on the cheese you choose. You need fusible: young or mature, dessert delicate or sharp with aftertaste or mold - you decide.

By adjusting the proportions of flour and liquid (cream), the sauce is boiled thicker or thinner. We remove the package of milk cream from the refrigerator in advance, let it warm up to room temperature.

First, melt the butter in a saucepan or in a frying pan. Do not let it boil or burn / darken, only dissolve to a liquid state. We cook using quality butter, not margarine.

Pour a portion of wheat flour into the loosened butter. The more it and less butter and cream, the denser, thicker the sauce. And vice versa. Less flour, more liquid - the consistency is more liquid, lighter.

Without wasting time, mix immediately, as if preparing béchamel sauce or custard, custard dough. We saturate the flour with oil, collect with oiled lumps. We do not leave dry areas.

Fill the "dough" with milk cream (not ice-cold), stir continuously in a circle and heat. We remove all the lumps and dilute until thickened uniformly.

Season the thickened and smooth creamy sauce with salt and ground pepper. Let's try. Remember, cheese will also enhance the flavor. Do not oversalt.

Remove from heat, on top of three cheese block. Stir one last time, combining the rapidly melting cheese shavings with the hot mass.

Pour the separately cooked pasta (penne, farfalle, spaghetti) with fresh creamy cheese sauce.
