As the story goes, apple pie was often present at poetry evenings with Marina Tsvetaeva's family and friends, and therefore has a corresponding name. Tsvetaevsky jellied pie is prepared with apples, but no less tasty and aromatic can be baked with other berries or fruits. We take the dough and filling according to the classic recipe as a basis. I advise you to take fresh fragrant raspberries or blackberries, or other berries and fruits according to the season.

Ingredients:

Dough:

Butter - 125 g

Wheat flour - 1.5 st.

Baking powder - 1 tsp l.

Cold water - 3-4 tbsp. l.

Filling:

Vanilla sugar - 1 tsp l.

Sour cream - 1 cup

Chicken eggs - 1 pc.

Fresh raspberries - 1 tbsp.

Sugar - 200 g

Cornstarch - 2 tbsp l.

Prepare the required ingredients according to the list. The butter should be well chilled.

Sour cream with a fat content of 20% or more is suitable. From the first - we will get a slight sourness in the filling of the baked pie, and with a more fatty one - it will have a creamy filling.

You can substitute cornstarch for pudding powder or wheat flour.

We start by making the dough. Sift wheat flour and baking powder into a bowl. Cut the butter into cubes and add to the same container.

First we chop butter and flour with a knife, then grind it with our hands into a homogeneous crumb.

Gradually pouring in water, we begin to knead the dough. Pour gently on a spoon and knead well. You should not rush, but you do not need to interfere for a long time either, since the dough heats up from the hands, and the butter begins to melt.

We take out the form, mine has a diameter of 26 centimeters. Cut out a circle of parchment paper to the size of the container. Roll out the dough on parchment and transfer to the mold.

We form the sides in 2 centimeters. If the form has a diameter of 20 centimeters, then we make the sides 4 centimeters so that our filling fits.

We make punctures with a fork at the base of the dough. We put the workpiece in the refrigerator for 20 minutes and turn on the oven to heat up to 180 degrees.

We clean raspberries from small debris, rinse under running water. Let them dry.

Break the egg into a bowl of sugar.

Beat until the grains dissolve.

Then add sour cream, vanilla sugar and starch. Mix well. If you use pudding, then you do not need to add vanilla sugar, it is already included in this powder.

Pour cream onto the dough. We spread the raspberries evenly. If you have other large berries or fruits, then on the contrary, fill them with cream.

We bake the cake until golden brown for 35-40 minutes - be guided by your oven. A product with higher sides may take a little longer for the filling to bake well.

Before removing the finished cake from the mold, let it cool to a warm state.
