I recommend taking sheep's cheese, it has a slightly different structure and taste than cow's, but if you can't find it on sale, then the second one will do.

Ingredients:
Fresh puff pastry - 400 g
Hard cheese - 150 g
Sheep cheese - 150 g
Chicken egg - 2 pcs.
Salt - as needed
Flour - as needed
How to cook:
Prepare foods from the list. Defrost the dough in advance.
In a deep bowl, grate feta cheese and hard cheese on a coarse grater. If the feta cheese is not too salty, add a little salt. In general, there is an opinion that the cheese filling should be quite salty in khachapuri.
Whisk in the homemade chicken egg. Stir the filling.
Roll out the dough thinly on baking paper, dust the paper and rolling pin with flour if necessary. Using the large saucepan lid, cut out a circle (approx. 30 cm in diameter). Remove excess dough.
Place the mixed cheese and egg on the circle. Spread evenly throughout the dough, leaving a small edge around the edge.
Roll out the cut dough to the same thickness, and cut the circle in the same way using the same lid. Cover the filling with it, press along the edge. It is convenient to do this with the teeth of a fork.
Using a pizza knife, cut the semi-finished pie into six equal pieces.
Beat the second chicken egg until fluffy and smooth. Use a silicone brush to brush the cake with it, do not forget about the cuts. Send the workpiece to bake at 180 degrees for 20-25 minutes in a hot oven, in the top and bottom heating mode.
Before serving, cut the puff pie slightly along the cuts, as the melted cheese will stick them together during baking.
