To roll up blackcurrant compote for the winter, prepare everything you need.
Sort the currants before use, removing wrinkled or spoiled specimens. Fill it with cold water, so excess debris (twigs or leaves) floats to the surface. After that, throw the currants into a sieve, rinse with running water and leave in such a state that all excess liquid is glass.
Prepare a jar for storing compote in advance, that is, clean, wash and be sure to sterilize by any method. Place prepared currants at the bottom of a dry container.
Heat water on the stove at the same time. Pour boiling water over the berry in a jar. First - up to half of the container so that the glass does not crack. It is also imperative to pour boiling water on the berry, and not on the walls of the jar. After half a minute, fill the jar with boiling water to the top.
Cover the jar with a lid, but do not tighten. Insist the compote for the next 15 minutes.
After a while, put on the nylon cover with holes. Take a hot jar with oven mitts, pour all the liquid into a saucepan, add a little more water. Add sugar, mix, boil for 2-3 minutes.
Pour the sweet liquid into a jar with berries up to the very neck. Close tightly with a sterile cap immediately.
Lay a towel on the table, put a jar. If the compote does not seep through the lid, then it is twisted tightly enough. Otherwise, pour the liquid back into a saucepan, boil, repeat the twisting procedure.
Cool the jar with compote under a blanket, so the glass will cool slowly, providing additional pasteurization.
Take the workpiece to the pantry for storage until winter.
