Cottage cheese is a wonderful, healthy product with a long history. It is tasty and fresh. And what delicious breakfast dishes can you make by adding cottage cheese!? Flatbreads, pancakes, cheese cakes, smoothies... You can't list all of them.

This natural product is an essential ingredient for baking. As you know, it is with cottage cheese that the most crumbly shortbread cookies are obtained. But, perhaps, it is enough to sing praises. It's time to bake a simple shortbread cookie with cottage cheese.

Ingredients:

  • Wheat flour - 225 g (+ a little for rolling out the dough)
  • Cottage cheese (fat content 9%) - 150 g
  • Butter (cold) - 150 g
  • Sugar - 1.5 tablespoons
  • Salt - 1 pinch

Prepare your ingredients. Cut the butter into small cubes and keep in the refrigerator for now. Mix flour with salt and sugar.

Taste the cottage cheese, if it is too sour, then you may need a little more sugar.

Add pieces of butter to the flour mixture.

Use your fingers to quickly rub the ingredients together to create a crumb with small buttery chunks. You need to act quickly so that the oil does not start to melt from warm hands.

Even better, if you can make shortbread dough in a food processor, then the whole process will take 2-3 minutes.

But our process is manual, so let's continue.

Add cottage cheese to flour crumbs and mix again, rubbing the ingredients with your fingers.

Now the crumb needs to be combined into a dough.

It is more convenient to do this on a board: put the crumb on a work surface and put it in a lump. If the curd was too dry and the lump will crumble, add 1-2 tablespoons of ice water.

Wrap the finished dough in plastic wrap and refrigerate for 30-60 minutes.

Prepare the baking sheet with baking parchment before rolling out the dough. Turn on the oven to heat up to 180-190 ° C.

After dusting the work surface with flour, roll the dough into a layer about 0.5 cm thick and cut out the cookies with molds.

Place the pieces on a prepared baking sheet.

You can decorate: dip any mold in cocoa powder and press lightly against the surface of the workpiece. You will get such a nice pattern. However, the cookies will warp slightly in the oven, so the pattern may become crooked. But to prevent this from happening, before baking, prick each piece with a fork, then the baking sheet with the contents can be taken out in the cold for 15-20 minutes, and only then baked. It will turn out much smoother!

Bake the cookies in the preheated oven for 12-15 minutes or until tender. Chill the baked goods slightly and serve.

The finished biscuits are not too brown, because they contain little sugar.

The cooled cookies can be slightly powdered with icing sugar before serving.

This dough recipe can be called basic, which means that add any flavorings to taste when kneading. For example, a pinch of vanilla or cardamom will add a more sophisticated flavor to baked goods, and half a teaspoon of cinnamon will add warmth.
