This dish comes from the USSR, when vegetables and chicken eggs cost a penny in the literal sense of the word. As it turned out, easy-to-prepare meals from inexpensive products are the most delicious and are very popular for generations. Ingredients:
Eggplant - 2 pcs.
Egg - 2 pcs.
Bulb onions - 1 pc.
Lean oil - 2 tablespoons
Salt to taste

How to cook:
To pan eggplant with egg and onion, prepare the foods listed. If possible, then buy blue small and long ones - this is a Dutch variety, it is completely without bitterness and with a very small seed, which does not bother you later in the finished dish.
Peel the onion, wash it under running water along with the eggplants. Pat dry with paper towels.
Heat a small amount of refined lean oil in a frying pan, put onion chopped in half rings into it. Fry over medium heat until soft. It is not necessary to bring to golden color, the onion should remain juicy.
Be sure to peel the eggplants, since the finished dish turns out to be delicate in taste, then the tough skin will be superfluous in it. Cut off the ends on both sides, cut the blue ones into medium cubes, transfer to the pan to the onion.
The pieces of eggplant will instantly absorb all the oil, but don't add it yet. Make the fire quiet, pour in some water or broth and simmer for 10-15 minutes, until cooked. You can even cover it with a lid.
In a deep bowl, beat two eggs until smooth using a whisk or fork, as if you would an omelette. Taste the eggplant slice. If it is completely soft and the water has completely boiled away, add the beaten chicken eggs.
Now the mass needs to be constantly stirred so that the eggs cook faster. Season the prepared dish with salt and pepper to your liking and serve immediately.
Like many dishes made from eggplant, this one will not look very good either, but it is so tasty that you will not want to share with anyone, I assure you đŸ˜‰
