Pasta with eggplant, tomato and minced meat

Ingredients:

Pasta - 200 g

Eggplant - 1 pc.

Bulb onions - 1 pc.

Bulgarian pepper - 1 pc.

Large tomato - 1 pc.

Lean oil - 2 tablespoons

Minced meat - 300 g

Salt to taste

Ch.m. pepper - taste

How to cook:

Prepare foods from the list. Peel the onion, wash it under running water along with the rest of the vegetables. Pat dry with paper towels.

To make the finished dish look prettier and more appetizing, roll tiny balls with wet hands minced meat, put them in oil heated in a pan and fry for a couple of minutes, until golden brown from all parties.

Cut onions into small cubes, add to the pan. Cook for 3 minutes, until soft and transparent.

After a while, peel the bell pepper from seeds and stalks, cut into the same cubes, add to the pan. Cook everything together for another 5 minutes.

Cut off the tail of the eggplant, cut the vegetable itself into small pieces. Transfer to the rest of the ingredients, reduce the heat under the pan and simmer for 5-7 minutes, until soft. Pour in a little water if necessary so that the vegetables are stewed evenly and do not burn.

Cut a large fleshy tomato into quarters lengthwise. Grate the pulp on a coarse grater, discard the peel. Add the grated mass to the pan, stir, add a little more water and simmer for 5 minutes.

Simultaneously boil the pasta according to the instructions. It is advisable to take fusilli or penne, thanks to the shape of which the sauce and pieces of vegetables are delayed, and with them it is most delicious.

Season the prepared meatball sauce with salt and pepper to taste.

Pour the pasta into the pan, mix everything well, heat for about a minute.

Divide the finished meal into portions and serve. If there is a piece of Parmesan in the house, grate it and sprinkle pasta with vegetables and meat balls on top, they will only benefit from this in taste.
