Nettles and eggs go well not only in salads. These products can be used to create a great light soup. There are a large number of options for preparing first courses based on nettle and eggs. Soup can be prepared with or without cereals, use different types of meat products. Eggs can also be used in different forms, for example, boil them in advance, cut them, throw them into a dish, or crack a raw egg mixture and pour into a boiling broth. The look and taste of the soup will be different in two cases.
As for the nettle, only young leaves are suitable here. They should be doused with boiling water, this will relieve them of the inherent stinginess of the plant.

Ingredients:
Meat (beef or chicken) - 400 gr.
Bulb onion - 1 pc.
Carrots - 1 pc.
Potatoes - 3 pcs.
Rice - 80 gr.
Nettle - 100 gr.
Chicken egg - 3 pcs.
Vegetable oil - 2 tablespoons
Water - 1.5 liters.
Salt, peppercorns - to taste
How to cook:
Prepare foods on the list.
Peel potato tubers, wash, cut into small cubes.
Place a pot of water on an overhead fire, place the meat inside. Boil it until tender, salt the broth, add pepper and bay leaf.
The cooking time of meat depends on its type. Cook beef for about 40 minutes, chicken for 20 minutes.
Throw the potatoes into the rich broth.
Peel the rest of the vegetables too. Cut carrots in circles, onions - in squares. Saute the vegetables in an oil pan for 5 minutes until the onions are translucent.
Put the sautéed vegetable into a saucepan 5 minutes after laying the potatoes. At the same time, add the rice, washed several times in water.
Pre-boil the eggs, then cool, remove the shell, cut into cubes.
Pour boiling water over the nettles to relieve stinging.
After the leaves are finely chopped.
Sliced nettles and eggs into a saucepan when potatoes and rice are ready. Bring the soup to the desired taste, adding spices and thickness. Boil broth for another 5 minutes, then remove from heat.
The soup should be infused for 10 minutes. After pouring it into plates, add thick sour cream.
