A bachelor snack with beer or a dish for lovers of small fish - sprat in tomato sauce. Optionally, it can be served with bread cakes, rye bread, potatoes. Fragrant, tasty fish from head to tail, both hot and cold.

Ingredients:
Sprat - 400 g
Tomato paste - 70 g
Water - 200 ml
Vegetable oil - 30 ml
Onions - 1 pc.
Carrots - 1 pc.
Garlic - 1 tooth
Bay leaf, salt, sugar, hot pepper - to taste
Step by step recipe:
To cook sprat in tomato sauce, take the food listed. Fish should be chilled, if you have frozen, thaw first.
Add win-win bay leaves, garlic, peppercorns as spicy enhancers of taste and aromas.
In a stewpan or a comfortable cauldron with thick walls, suitable for stewing and frying, we heat the lean refined oil. Throw in some granulated sugar, which caramelizes and makes vegetables with sprat appetizing, richer.
Pass the onion first. Shred the peeled onion into rings, pour it into hot oil and fry for a minute or two on your own.
Then add the carrots, cut into circles of the same thickness. Let the vegetables soak in oil and lightly brown.
We remove the insides of the sprat by cutting along the abdominal cavity. We rinse with cold water. The heads can be cut off or left. We put the fish on top of the oiled vegetables.
We dilute the tomato concentrate in drinking water (boiling water), salt. Fill the sprat with onions and carrots so as to cover all the layers.
We lower the bay leaves, a garlic clove, a few peppercorns. We boil. Reduce the heat to low, install the lid and simmer the sprat and vegetables in tomato sauce for about one hour with a quiet boil.
Periodically check the amount of liquid inside the container, top up with boiling water if necessary and add additional spices. As a rule, half an hour is enough for such a dish.
An hour later, by the end of cooking, the fish is steamed through and through and the meat is easily separated from the ridge. Even the bones disintegrate from prolonged languor, almost like in canned food.
Serve homemade sprat in tomato sauce with, for example, slices of bread and fresh herbs.
