I found this recipe on the internet about 5 years ago. And he turned out to be perfect. And all 5 years I bake only on it, in large cases I make regular small muffins in portions as it should be, but sometimes time is short and I just pour everything into one form, for my beloved family, while watching a movie with tea or milk, the most then!!! Portioned and with cream for holidays and guests)
Ingredients: flour, margarine, baking powder, sugar, eggs, medium orange, salt, vanillin or vanilla sugar
Cooking method:
We prepare products, margarine (you can replace it with butter) and eggs (I have category C1) in advance to get out of the refrigerator, sift the flour. You can mix with a mixer, or you can use a regular whisk.
Grind softened margarine with sugar and vanilla, add eggs, salt and mix everything thoroughly.
We take oranges, wash them thoroughly, pour over boiling water, remove the zest on a fine grater, squeeze the juice, add the zest and juice to the mixed products
Add flour gradually, as you need to get the dough not too thick, but not liquid. The video shows how it should turn out (The amount of flour can vary greatly due to the amount of liquid: different eggs, different amounts of juice from oranges), if all the same the dough turned out to be very thick, dilute milk. Add baking powder, stir.
We shift to the form I have D = 28. In height, the dough should fill a little more than half of the mold (this is more about a portioned muffin because the dough can run away when baking🙃), and there is such a possibility from a big one too).
Preheat the oven to 180 C and send our cupcake for 30 minutes. We check with a toothpick and on the crust on top. For portioned small muffins, 10-15 minutes is enough. After we take out the cake, cool it (it is better to cool on a wire rack so the crust will remain on all sides) and transfer to a plate.
