In the summer-autumn season, you can add any vegetables to this simple dish and it will be great with each of them. Today we will cook fried potatoes with zucchini, they will make our usual side dish juicy and very tasty.

Potatoes - 500 g

Zucchini - 200 g

Bulb onions - 1 pc.

Garlic - 1 pc.

Lean oil - for frying

Salt to taste

Prepare the food you need. Peel the potatoes, onions and garlic. Then rinse thoroughly under running water and pat dry with paper towels.

To make the potatoes tasty and crumbly in finished form, do not hesitate to ask the seller for a variety for mashed potatoes or frying, I assure you, they all know about their product. Otherwise, the dish will take a long time to cook and may taste glassy.

Heat the lean refined oil in a large skillet and place the chopped potatoes in it. Fry for 5-7 minutes, until golden brown on all sides. I like to cut it into strips so it cooks faster.

Then cut the onion into half rings, add it to the pan, stir. Reduce the heat and cook for another 5 minutes, until the onion slices are soft and transparent.

To make the zucchini quickly fried, also cut it into strips, if young. If the vegetable is large and old, then it must be peeled from the peel and seeds, and only then cut and add to the potatoes.

Cover the pan with a lid, simmer for another 5 minutes. You should not fry the zucchini for a long time, you need to try to preserve all the nutrients.

Now you need to cut the garlic into thin slices directly into the pan, salt and pepper the dish to taste, mix for the last time. Keep it on low heat for another 1-2 minutes so that this vegetable also gives its aroma to the potatoes. If you do not like the smell of garlic, but its taste, then you can skip the clove through a press and add in the form of gruel.

It is very simple to check the dish for readiness, you just need to pierce one slice of potatoes with a knife.
