Pickled cucumbers with lemon are an excellent instant appetizer for meat dishes and more. This salad is especially suitable for kebabs; you can cook it at home and take it with you outdoors.
Cucumbers are pickled without vinegar; in this recipe, lemon replaces it. The appetizer turns out to be less concentrated, while it has a light citrus taste and aroma. We prepare the marinade on the basis of soy sauce with the addition of mustard. Due to the short-term pickling, the cucumbers retain their density, while they manage to marinate well, they turn out to be very juicy, acquire a piquant taste.

Ingredients:
Cucumbers - 300 gr.
Lemon - 6 rings
Dill - 10 gr.
Soy sauce- 3 tbsp.
Vegetable oil- 2 tbsp.
Sugar- 1 tsp
Garlic - 2 cloves
Mustard(granular) - 1 tsp
Black pepper- taste
Salt to taste
How to cook:
Prepare foods from the list. Choose high-quality, dense and crunchy cucumbers.
Wash each copy thoroughly, cut into 2 longitudinal parts. Then trim into wedges and place in a deep container.
Rinse the lemon. Cut it into thin slices and add to the cucumbers without peeling the skin off the citrus. It is better to remove the seeds so that the appetizer does not taste bitter.
Rinse the dill, chop it finely, add it to the cucumbers and lemon.
Prepare the marinade separately: pour the soy sauce and butter into a bowl, add sugar and garlic. Garlic cloves can be chopped with a garlic or coarsely chopped with a knife (optional).
Mix the mixture thoroughly and pour into a container with the contents. Mix everything so that the marinade envelops each slice, salt to taste. Marinate the cucumbers for the next 2 hours in the refrigerator, covering the container with cling film.
Cucumber salad with lemon ready to eat. It can be refrigerated in glass containers for up to two weeks.
